Background & Philosophy
Why Moon Forest Was Created
After living in Japan for many years, owner Glass Wu found herself longing for the authentic flavours of her hometown, Hong Kong. While several Hong Kong restaurants have opened in Tokyo, most remain rooted in traditional formats. Wu envisioned something different: a modern, elevated dining experience that celebrates Hong Kong Cantonese cuisine while embracing contemporary elegance and sourcing the finest ingredients from across Japan. Every corner of Moon Forest reflects her personal touch. She designed the interiors in collaboration with craftsmen, importing tiles, marble, and wallpaper materials herself, and selecting each piece of furniture one by one. Plates, glasses, and tableware were handpicked from overseas, ensuring each element enriches the sensory experience. Moon Forest is not only about food, but about the totality of the dining experience — taste and aroma complemented by beauty, texture, music, and atmosphere. With its signature Tokyo Tower view and thoughtfully designed terrace, Moon Forest offers a new chapter in Cantonese dining, bringing together authenticity, artistry, and vision in the heart of Tokyo.

Executive Chef, MOON FOREST Born in Tochigi Prefecture
At MOON FOREST, Chef Kazumasa invites you to experience the magic of modern Cantonese cuisine, where Cantonese cuisine, curated dim sum and unique cocktails come together in a relaxed, enchanting atmosphere.
Chef Kazumasa expertly merges traditional Cantonese culinary techniques with innovative flair, sourcing the finest ingredients from across Japan. His keen eye for freshness ensures that every dish not only delights the palate but also tells a story of authentic Cantonese cuisine and culinary artistry.
After graduating from the prestigious Tsuji Culinary Institute, Chef Kazumasa honed his skills at renowned restaurants in Tokyo. In 2005, he was part of the founding team at Sense at Mandarin Oriental in Tokyo, where he served as Junior Sous Chef at the acclaimed Cantonese restaurant, contributing to its Michelin star achievement.
His journey continued as Sous Chef at YAUMAY in Tokyo in 2018, the sophisticated modern Chinese restaurant from London, where he played a key role in its successful launch in Japan, and again earning a Michelin Star.
In 2025, Chef Kazumasa was appointed Executive Chef of MOON FOREST at its grand opening, where he continues to craft distinctive and refined gastronomic experiences that transport diners to a world of culinary enchantment.

Originally from Hong Kong, Glass Wu has lived and worked in Japan for over a decade. With a professional background in real estate and hotel management, she has long been dedicated to creating spaces where people can feel inspired and cared for. Moon Forest is the culmination of that vision — a place where her love of design, hospitality, and gastronomy come together.
Passionate about detail, Wu personally curated every element of the restaurant, from the interior design and furnishings to the custom-imported tableware and glassware. Guided by her belief that dining should engage all five senses, she strives to deliver not only exceptional cuisine but also an immersive and unforgettable experience for every guest.

As Managing Partner, Jason plays a strategic role in overseeing the restaurant’s financial operations while actively pursuing partnerships and collaborations that align with Moon Forest’s vision.
